Dante Gonzales’ DFC Ghost Chicken cooks inside a small kitchen at the Hotel Normandie
Ride or Fry food truck founder and chef Dante Gonzales debuted DFC Ghost Kitchen last week for Koreatown residents. DFC stands for ‘Dante’s fried chicken,’ and the delivery-only restaurant is located inside a small kitchen at the Hotel Normandie, just behind the neighborhood favorite, Cassell’s Hamburgers.
Gonzales wanted to bring a soulful fried chicken option to Koreatown. After a few meetings with Cassell’s chef and owner Christian Page, Gonzales launched DFC Ghost Kitchen, where he independently prepares dishes like bone-in fried chicken and wings with a sweet apricot sauce, a eight-hour smoked chocolate and stout brisket, 15-spice smoked recipe for both spareribs and jackfruit, and smoked pimento mac and cheese with gouda. And while the emphasis is on Gonzales’ fried chicken, the chef wants non-meat eaters to try his vegetarian menu too.
Gonzales’ founded a popular underground party in 2000. The monthly party was an amalgamation of art, music, and food that even spread to Europe. He returned to Los Angeles to get the Ride or Fry food truck running in 2010, and wrote a cookbook in 2012. DFC Ghost Kitchen is available on Caviar, Postmates, and Grubhub for Koreatown denizens only. The menu is available for delivery Thursday through Saturday from 6 p.m. to 11 p.m.
