Downtown’s Next Rooftop Restaurant Works Mediterranean Flavors By the Pool

Pilot comes to the Hoxton Hotel very, very soon

Another new restaurant tenant is coming to the busy Downtown skyline soon, as the upcoming Hoxton hotel announces plans to drop a Mediterranean-leaning rooftop restaurant and bar right on Broadway by sometime this fall.

The new restaurant is to be called Pilot, and will feature food from chef John Taube of New York City’s Sunday Hospitality group. That outfit has come west to take over all the food and beverage at the hotel, including the ground-floor restaurant Sibling Rival and a still-in-the-works basement cocktail bar.

As for Pilot, the plan is to offer an outdoor experience with sightlines to all the other skyscrapers popping up in South Park and beyond. There will be lots of live-fire cooking from the kitchen as well as several large-format dishes and a few tableside presentations. There will be plenty of vegetables and seafood, of course, as well as a push for big, weather-appropriate cocktails. The rooftop space will also extend all the way out to the open-air pool, which will have its own small menu for travelers and guests of the hotel.

The Hoxton, Downtown LA is currently eyeballing an opening date this fall, possibly as soon as September. That puts them slightly ahead of several of the other South Park and Fashion District openings, including Suzanne Goin and Caroline Styne’s own hotel restaurants at the Proper Hotel.
